What to do with collection journal quests?

I don't see anything started for collection journal quests. For example, the third one for fish is:
"1 Cast, 1 Fish"
Prove that you're a real fisherman by landing some huge fish. I promise you'll never forget it. Remember, you won't catch any big fish auto-fishing. - Duncan

- From the entire fishing list, collect at least 15 (5 stars) [ ]
